I don't like eggs, but I am experimenting with eating them to see if it affects my heath at all. (The hope is that it will do so positively.) What are some recipes that are good for the egg-shy palette? I know I could throw them in pancakes or chocolate chip cookies, but those are not especially healthy, and I'd be getting less than half an egg per serving. For reference, my least favorite egg preparation seems to be hard boiled. The look of the yellow part grosses me out. I honestly don't like them any way I've tried them, though. I know this is a hard one. Thanks for any ideas you may have.

Besides omelets where you can add lots of other ingredients (veggies, meats, cheeses), you might like quiche. Don't worry that a quiche is too much for one sitting - I have found that they reheat in the microwave almost as good as fresh from the oven.

As long as you keep the crust, egg and milk part, the rest is up to you! You can eat it right out of the oven, or it's good the next day cold or warmed in the micro. * 1 prepared pie crust * 8 slices cooked bacon, crumbled * 1 (4 ounce) can diced green chilies, drained * 4 green onions, chopped * 1 cup shredded monterey jack cheese * 1 cup shredded cheddar cheese * 1 cup half-and-half * 4 eggs * salt and pepper Prep Time: 15 mins Total Time: 1 hr 1. 1 Preheat oven to 400°F 2. 2 Preback prepared pie crust 5 minutes or until golden brown. 3. 3 Sprinkle crumbled bacon, then chilies and green onion over crust. 4. 4 Combine cheeses and sprinkle over bacon, chilies and onions. 5. 5 Beat half and half and eggs in separate bowl. 6. 6 Salt and pepper to taste. 7. 7 Pour egg/half and half mixture into crust. 8. 8 Bake quiche until knife inserted into center comes out clean, about 45 minutes. 9. 9 Let quiche rest 5 minutes before cutting.
Hi Brahbrah, Eggs are actually a good source of protein. And an inexpensive way to get protein. Since you mention that you are looking for "healthy", I'll suggest low fat and healthy ingredients. I say make Baked French toast. Top the toast with fresh fruit and pure honey. Sprinkle with slivered Almonds for additional "healthy" benifits and flavor When I say "pure honey" I don't mean the pasteurized stuff from the squeeze bottles at the grocery store.. I mean that you should find a local beekeeper and get fresh honey from them. You will be surprised at the health benifits of real honey! Fresh fruits such as Blueberries, Strawberries, Bananas, and even citrus fruits or apples-&-cinamon will help disguise the egg flavor that you dislike. Add some vanilla and/or cinnamon to the egg mixture too. I hope this helps. ~*Bon Appétit*~
This is a good recipe that I have here if you're up for some French food. However it is the only thing that I think takes away the taste of egg. Pipérade basquaise Simple and delicious, piperade is scrambled eggs with tomatoes, paprika and ham. The name piperade comes from the Basque word for paprika "biperra". Ingredients (for 4 people) •4 slices of Bayonne ham •6 peeled tomatoes with pips removed •3 green paprika •12 eggs •1 small Espelette chili •2 large chopped onions •1 tablespoon oil •4 crushed cloves of garlic •salt, pepper Procedure 1.Remove the seeds from green paprika. Blanch them for a few minutes. 2.Pour some olive oil in a frying pan. Gently fry the onions so as not to loose their color. Add the garlic, paprika and tomatoes cut in quarters. Salt and pepper. Cook for 30 to 40 minutes so that the tomatoes lose some of their water. 3.Beat the eggs in a bowl. Add them to the piperade and cook them as like scrambled eggs. 4.Slice the ham thinly. Brown it in the frying pan and put on the piperade. Put some Espelette chili sliced thinly on top of the piperade. How to Serve : Serve immediately. Skinny Omelette: Despite their name they are actually very delicious:) 2 large (preferably organic) eggs a tiny pinch of fine grain sea salt a few tablespoons of chopped chives a dollop of pesto a bit of goat cheese or feta a small handful of mixed salad greens Use a fork to beat the eggs and salt in a small bowl. Beat well, until the eggs are mostly uniform in color - they seem to run around the pan more evenly when there aren't huge patches of yolk vs. whites. In your largest non-stick skillet over medium heat (this is one of the few occasions I actually use non-stick) pour the egg mixture and give it a good swirl so that they spread out thinly across the entire pan. Alternately, you can use a crepe pan or crepe maker - this works beautifully as well. Sprinkle the eggs with some of the chives and let them set, this happens quickly depending on the heat of your pan - 15 seconds to one minute. Run a spatula underneath the omelette and slide it out of the pan (flat) onto a countertop, large cutting board or Silpat-line cookie sheet. Do this with confidence (or practice). Spread the pesto across the surface of the omelette (if you have a thick pesto, thin it a bit with water to make it easily spreadable), and then sprinkle with the cheese and salad greens. Starting with one end, roll the omelette away from you. Cut in half on a deep diagonal. Season with a bit more salt if needed and serve garnished with a few chopped chives Curried Egg Salad Recipe 5 good quality eggs 1 1/2 teaspoons curry powder (your favorite) 3 tablespoons plain yogurt 2 big pinches of salt 1/2 small onion, chopped 1/2 medium apple, chopped 1/4 cup pecans, toasted and chopped 1 small bunch of chives, minced First off, you need to boil the eggs properly (the key to good egg salad!). Place the eggs in a pot and cover with cold water by a 1/2-inch or so. Bring to a gentle boil. Now turn off the heat, cover, and let sit for exactly seven minutes. Have a big bowl of ice water ready and when the eggs are done cooking and place them in the ice bath for three minutes or so - long enough to stop the cooking. While the eggs are boiling and cooling, combine the yogurt, curry powder and salt in a tiny bowl. Set aside. Crack and peel each egg, and place in a medium mixing bowl. Add the curried yogurt, onions, apple, pecans, and chives. Now mash with a fork. Don't overdo it, you want the egg mixture to have some texture. If you need to add a bit more plain yogurt to moisten up the mixture a bit, go for it a bit at a time. taste and add more salt if needed. Enjoy as-is, or served wrapped in lettuce or between two slices of good, toasted bread Hopefully you'll find something that I have suggested or somebody else suggested really tasteful:) I know what it is like to have a hatred for food so don't feel bad about it.
