I eat the same thing for lunch every day: I first make my own wrap in a skillet using a bit of safflower oil, unbleached flour and water. In the wrap I put: a handful of chopped veggies (bell pepper, white onions, and cucumber), some lettuce, a slice of Swiss cheese, 3 slices of Genoa salami, and a few lines of mustard. I then press the wrap in a George Foreman grill. I can whip this up fairly quickly and cheaply every day so it has been working well for me but I'm starting to get concerned that maybe it's not a healthy thing to eat every day. Is it? I'm most concerned about the 3 slices of salami. Is eating 3 slices of Genoa salami daily very unhealthy? What should I replace it with? Are there any other quick, cheap, and healthy recipes you can recommend? Cool. Thanks for the replies so far. I just want to add that I have no interest in losing weight. I'm actually trying to bulk up. My concern is just making sure I'm getting enough nutrients and stuff like that. I'm looking for meals that cover the major food groups and use things that keep well since I cook for myself and don't want to buy, for example, a whole head of fresh brocolli that I probably won't be able to use before it spoils.

Ingredients 2 skinless, boneless chicken breasts 1 cup (250 mL) chicken broth 1 cup (250 mL) thinly sliced cabbage 2 green onions, cut into slivers 1 small carrot, shredded 2 tbsp. (30 mL) chopped cilantro (optional) 2 tbsp. (30 mL) chopped peanuts 4 large (10-inch/25 cm) flour tortillas Peanut dressing: 2 tbsp. (30 mL) peanut butter 2 tbsp. (30 mL) soy sauce 2 tbsp. (30 mL) lime juice 1 tbsp. (15 mL) brown sugar 1 tbsp. (15 mL )sesame oil 1 small clove garlic (or less — to taste) Dash hot red pepper flakes (optional) Cooking Instructions In a small saucepan, simmer the chicken breasts in the chicken broth over low heat for about 10 minutes or until cooked through. Remove from broth and let cool completely. (If you're using leftover grilled or roasted chicken, skip this step.) When the chicken is cool, shred it, by hand, into long shreds — just pull the chicken apart along the grain of the meat. Place in a bowl. Add the cabbage, green onions, carrot and cilantro and toss to mix. In a blender or food processor, blend together all the ingredients for the peanut dressing until smooth and creamy. Pour this mixture into the chicken salad and toss to coat. Lay a tortilla on a plate and spoon 1/4 of the chicken mixture onto the middle of the tortilla. Sprinkle with some of the chopped peanuts, fold in the bottom and top, and then fold over the sides as tightly as possible. If you're eating immediately, cut the wrap diagonally in half and serve. If you're planning to eat it later, wrap securely in plastic wrap and refrigerate until serving time. Really good. I found this online a month ago when I wanted to lose weight. you could make some carrot and lentil soup fry onion and garlic in big pan rinse about 250g red split lentils add to fried onions and garlic add water - enough to cover add about 6 peeled and sliced carrots bring to boil, simmer when cooked, cool and liquidise (or not ) season and add more water if needed this is incredibly filling and the carrots are so healthy, put it in the fridge or freezer in portions but it won't hang around long because it's lovely

do you eat it right away or pack it to eat later? pastas are good. maybe wheat pasta. after cooking the pasta, there are many things you can do with it. mix spaghetti with your choice of veggies and chicken and some vinegar and oil type dressing. or if you want to spend a little on seafood, top with shrimp and lemon and veggies. i think that if you eat anything all the time, 365 days a year, it might not give you some nutrients that its lacking. so maybe change it up once in a while.

After it is slightly cooled, layer other ingredients.

Your wrap idea is fine, but let me share what I do. Use a whole-grain lo-carb tortilla instead. Use lo-fat turkey variety cold-cuts. Your salami is high in nitrites. Try a variety of different cheeses. Add lettuce or spinach leaves, celery & carrot sticks, tomato slices.

Here is an easy one that I make for my hubby. He works nights & so, he can't go out to lunch. Take a pork roast & cut it into 1 inch cubes (you can buy it already cubed, but it is easy to do it yourself...and will save you money that way) Brown pork cubes with a little bit of oil & a sliced sweet onion....just until brown. Put it in your crockpot. Add a cup of chicken broth, a jar of salsa verde and a chopped green bell pepper. After 3 hours, you can add any other veggies you want. I use red potatoes & chopped carrots. Cook for 1-2 more hours on high. This works well because you can cook it on Sunday...then, freeze individual portions for the week. Just add a roll or corn tortilla for your grains...and a yogurt or something for your dairy...and you are covered. It can be made on top of your stove or in an oven proof pan, too. Just decrease the cook time to 1 hour...and watch it closely.
