There are some elements you should consider. 1. Ingredients: Find the best quality ingredients you can afford. You may want to look at visiting the local farmer's market. Some are open weeknights. I often find visiting markets after work is a good way to relax. 2. Target audience: Are you cooking for yourself or more than yourself? I have found that during work weeks, I make heavy use of my crock pot. I take 30 minutes the evening before to chop up some veg and some meat. I toss it in and set the crock pot to low the next morning when I leave for work. Great food is ready when I return. There are many recipes available online.

This is a great way to eat for a week on a budget and with little time in the kitchen. Cook some chicken breasts, or another lean meat of your choice on your day off (pork tenderloin or pork loin work well too). All you have to do is salt & pepper them and throw them in the oven on a baking dish. So quick and easy and because you are buying in bulk it is cheaper. Buy the big pack of chicken and freeze half for next week. It will save you money. Now you have this on hand to make meals with all week. You can make all sorts of salads and add your weeks protein if choice. Spinach salad, toss green salad, greek salad, pasta salad, bean salad. Add nuts and fruit to your salads to change it up. Or cut some up with veggies and add it to an omlette. Or make a sandwich. Clubs, wraps, panini's. With avocado, goat cheese, tomatoes, arugula, olive oil...mmm. Or add some protein to a store bought soup, or chili, or pasta sauce. And at the end of the week, when your meat is running out, use these ideas with canned tuna instead. Skipjack tuna is the best if you are going to eat it often because it has the lowest amounts of mercery and is safe to eat 3 times a week no problem. You could also make easy meals in larger batches and freeze them into portion sizes so all you have to do is thaw when you don't feel like cooking. Curries (including the premade bottled ones...very little work), pasta sauces, soups and stews all freeze very well. Good luck! Hope this helps!

Chicken & Rice 4 chicken breasts 1 cup rice (uncooked) 1 stick margarine 1 can cream of chicken soup 1 can cream of mushroom soup 1 can cream of onion soup Melt margarine in skillet and add rice and soups. Pour into a baking dish and put chicken on top. Cook at 350 degrees covered for 45 minutes then uncovered for an additional 30 minutes.

Multi meals. Make a decent sized meal one night and divide up into 4 portions and season each differently and freeze. Imagine 4 dishes of mince stew, one curried, one for paste, one beefy, one known only to you. LoL You can also prepare cooked pasta, rice and potato the same way. Look in the supermarket for those ready frozen meals. Say to yourself "I can do that for half the price". When you look at them and work out just how much is in those packages you will see they are exorbitant and are not value for money. When you are making your shopping list ask yourself if you can make it cheaper A few lengths of spaghetti broken into pieces witha stock cube or ketchup and you have noodles in 3 - 5 minutes..
